Shepards Salad with Tahini Toast

Shepards Salad

1 punnet cherry tomatoes, halved
1 red onion, sliced
1 cucumber, sliced
1 green shallot, sliced
handful of chopped dill
1 red chilli, sliced
fetta cheese for garnish
salt and pepper to taste
1 turkish bread loaf

Shepards Salad Dressing

1 tablespoon balsamic vinegar
3 tablespoons olive oil
1 garlic clove, crushed
honey to taste
salt and pepper

Tahini Cream

200 grams soft fetta
1 tablespoon tahini
1 squeeze of lemon

Shepards Salad Dressing
Combine all ingredients in a screw top jar. Shake to combine. Set aside

Shepards Salad
Tumble all ingredients together & toss with dressing. Crumble over the fetta. Set aside.

Tahini Cream
Mash the fetta into a cream and add the tahini. Stir in a little lemon juice to form a thick smooth cream.

Tahini Toast
Cut a loaf of turkish bread into 3 pieces, then halve and toast.

Spread with tahini cream and top with dressed shepards salad. Garnish with crumbled fetta.
